Did you know? In medieval and early modern kitchens, the spit was the preferred way of cooking meat in a large household. A servant, preferably a boy, sat near the spit turning the metal rod slowly and cooking the food; he was known as the “spit boy” or “spit jack”.
So what is the benefit of roasting using a rotisserie? This method is generally used for cooking large joints of meat or entire animals, such as pigs or turkeys. The rotation cooks the meat evenly in its own juices and allows easy access for continuous self-basting. Make your own marinade to baste the meat as it cooks. Some of our favorite flavors include lemon, garlic, oregano and red wine.
Basic Rub for Roast Pork
- 4 fresh garlic cloves, cut in half
- garlic powder
- 2 teaspoons of thyme
Prepare your pork roast by washing under cold water and dry with paper towels.
Use a sharp knife and make a few cuts into the meat. Push a fresh garlic down deep into the cuts on the meat. Using your hands rub the seasonings into the roast over until you can no longer feel the grittiness of the seasoning and the thyme leaves appear to be evenly spread throughout the roast.
